This bangin balsamic flank steak dinner is so simple, and so delicious that you will be adding it into your regular rotation. Let’s get right to it – why delay!
Ingredients:
4-oz flank steak
2 TBS balsamic vinegar
2 tsp olive oil

2 tsp dried rosemary, minced
1 cup spinach leaves, washed
2 cups cauliflower florets, steamed until soft
Nonstick cooking spray
Directions:
(1) In a zip-top bag, combine vinegar, oil, and rosemary. Add in the flank steak and let marinade for 30 to 60 minutes in the fridge. Cook the steak on the grill or in the broiler for about 5 minutes each side. Note: If your steak is larger than 4 ounces, and most likely it will be, you will want to make more of the marinade and cook it for a longer duration of time.
(2) Heat a nonstick skillet coated with nonstick cooking spray over medium heat, and add spinach leaves seasoning with salt and pepper. Saute for 3 – 5 minutes
(3) Blend the steamed cauliflower florets in a food processor or blender until smooth, and then re-heat in the microwave (faux mashed potatoes…delicious!!)
