Gluten Free Mac n Cheese

Mac n Cheese is definitely a guilty pleasure of mine – and it doesn’t matter what kind it is. It could come from a box, or it could come from scratch – if it’s in front of me – I’m eating it! Life is about balance – you have to enjoy what you love from time to time.

But what happens when a dietary restriction ruins one of your faves? What happens when you can no longer have the ingredients found within your favorites?

You do what any resourceful girl does and take yo ass to Google!!

Here is a recipe that I have personally utilized to keep me GF and DF (dairy free).  It’s quick and simple and very delicious!!

Ingredients:

2 Boxes of Dried, Gluten Free Elbow Macaroni pasta noodles

8 ounces of Daiya dairy free mozzarella style shreds

Gluten Free Mac n Cheese

1/2 bag of Steamfresh Broccoli florets – microwaved and diced

Cooked Diced Chicken breast (about half a breast for serving)

Salt to taste

Directions:

Make the elbow macaroni as directed on the box.

While the macaroni is cooking, place the cheese in a bowl.

Pour the warm macaroni over the cheese, and include a small amount of the water from the macaroni. You can add more water as you go if you need to thin things out. The heat from the noodles will melt the cheese.

Stir the noodles and the cheese together. Add in the broccoli florets. Stir. Add in the chicken. Stir.

Then you have a nice easy dish for yourself – or 5 or 6 of your friends, since this makes 4-6 servings haha. Enjoy!!!
