If you are like me – you are sick and tired of BLAND RICE! There is only so much rice, chicken and broccoli a girl can eat!! I like this version of adding in a little punch and extra fiber with some beans and amazing Caribbean spices and herbs!
It’s time to kick your rice up a notch!
1 Packet of Uncle Bens Boil in a Bag Rice (it’s just easiest for me, but you could also do
regular brown rice if you choose in a rice cooker)
1 15oz can of red beans, drained
1 14oz can of chopped tomatoes
6 garlic cloves, chopped
2 TBS olive oil
2 tsp Turmeric Powder
2 tsp Thyme
2 tsp cumin powder
1 1/2 tsp Himalayan Salt
In a sauce pan, heat beans, tomatoes, and spices until warm. In a skillet, heat oil and garlic for about a minute – combine with beans and tomatoes in sauce pan. Add in cooked rice and stir to combine all ingredients. That’s it! You’re done!
