While speaking to one of my challengers the other day, she asked, “Can you come up with some fun new recipes to try – I’m so sick of chicken and vegetables”.
Girl, preach!
I cannot do the same dang chicken over, and over again – and I’m not even someone who gets overly adventurous with her eating – but when it comes to eating an abundance of chicken, you have to find a way to kick it up a notch. And if you are on the 21 Day Fix, you need to be mindful of the kinds of sauces and marinades that you use. Enter this delicious

21 Day Fix Jamaican Chicken. Mmmmm…
This recipe always reminds me of sunshine and vacation, because typically it’s made on the grill; however, you can take yourself to the islands even in the dead of winter with this tangy treat:
Ingredients:
3 boneless chicken breasts
2 limes, juiced
1/2 cup of water
1 tsp allspice
1/2 tsp nutmeg
1 tsp brown sugar
1 tsp dried thyme
1/2 tsp ground ginger
1 tsp ground black pepper
2 TBS vegetable oil
1 onion, chopped
1/2 cup of green onions, chopped
3 cloves of garlic, minced
1 habanero pepper, chopped
1/2 cup of pineapple juice
Instructions
- Place thawed chicken in a medium bowl. Cover with lime juice, pineapple juice, and water. Set aside
- In a blender or food processor, blend allspice, nutmeg, salt, brown sugar, thyme, ginger, black pepper, and vegetable oil. Once blended well, mix in onions, green onions, garlic and habanero pepper until almost smooth. Pour of the chicken mixture and marinade for at least 2 hours in the fridge.
- Preheat oven to 400 degrees F
- Place the marinated chicken with juices into a baking dish and cover. Bake for 35 to 40 minutes, or until juices run clear. Garnish with a lime and enjoy!

Please note: A serving size of chicken is about 4 ounces – depending on your chicken breast size that is usually about a 1/2 a breast, or the size of your fist for rough estimation. Don’t forget to use your red container to measure this out!
